🧑🍳 About the Role
We’re seeking an experienced and dynamic Director of Food & Beverage to lead all F&B operations at Hilton Fiji Beach Resort and Spa. Reporting to the Director of Operations, this role is ideal for a strategic leader with strong operational insight, a passion for guest satisfaction, and a deep understanding of hospitality standards.
Skills/Qualifications Required
📋 Key Responsibilities
- Continuously assess competitors and adapt strategy to stay ahead in the market
- Foster a motivated, well-trained, and service-oriented team culture
- Monitor HACCP compliance, food safety, and hygiene across all venues
- Maintain guest satisfaction, resolve service issues, and lead recovery actions
- Collaborate with executive leadership for strategy, planning, and performance goals
- Drive departmental profitability while ensuring exceptional food and service quality
- Train and develop department managers and staff to Hilton International standards
- Lead innovation in menu planning and service concepts
- Oversee budgeting, cost control, inventory, and supplier management
- Establish operational standards and lead all F&B departments
✅ What We’re Looking For
- Exceptional organizational, communication, and planning abilities
- Able to thrive in high-pressure environments with a calm, guest-focused approach
- High proficiency in Microsoft Office and hotel F&B systems
- Familiarity with HACCP, food safety, and international F&B standards
- Excellent knowledge of F&B operations, hospitality systems, and service techniques
- Proven experience in cost control, inventory management, and supplier negotiations
- Fluent in written and spoken English
- Strong leadership, team management, and staff training skills
- 5–8 years as Head of F&B in a 4 or 5-star hotel or upscale restaurant group
